When we talk about fermented beverages, we single out a particular preparation, like “beer” or “kombucha” and discuss it in isolation. In fact, through our long history with fermentation, humans have harnessed an amazing variety of microbes to transform beverages that we drink. In this episode we showcase some lesser-known fermented beverages and place them in historical and scientific context.
