Carmen’s Heart-Beet Canapés

Show 020 - Recipe - Canapés


  • 1-2 red beets
  • 1-2 golden beets
  • Freshly squeezed lemon
  • 1-2 Tbsp extra virgin olive oil
  • Pinch of sea salt

Peel and slice the beets super thin – preferably on a mandolin slicer.

Marinate the slices in lemon juice, and a bit of olive oil, with a pinch of salt, for 2 hours to overnight.

  • 1 cup cashews
  • 1 Tbsp minced shallot
  • 2 tsp nutritional yeast
  • zest of one lemon
  • 2 Tbs lemon juice
  • 2 Tbs extra virgin olive oil
  • Pinch of sea salt (up to 1/4 tsp)

Soak the cashews in water for a few hours or overnight.

Blend all ingredients in a food processor until it forms a grainy ‘cheese’.

  • 1 garlic clove, minced
  • 1/3 cup packed basil leaves
  • 2 Tbsp lemon juice
  • 3 Tbsp extra virgin olive oil
  • 1-2 Tbsp water
  • 1/2 tsp honey or pure maple syrup
  • Pinch of sea salt

Blend all ingredients – it will make a runny drizzle for the tops of the canapes.
